Ingredients

Makes 4 servings

2 medium (about 300g) beets, peeled and chopped
2 medium (about 250g) carrots, peeled and chopped
1 medium (about 200g) apple (sweet variety like Fuji or Honeycrisp), cored and chopped
1 tablespoon (15ml) fresh lemon juice
1 teaspoon (5g) grated ginger (optional, for a spicy kick)
1 ½ cups (360ml) cold water
1 tablespoon (15g) honey or agave syrup (optional, for extra sweetness)
Ice cubes for serving
Optional Garnish:

Thin apple slices or a mint sprig

Fine mesh strainer or cheesecloth (for smoother texture)

Instructions

Step 1: Prepare the Produce
Peel and chop the beets, carrots, and apple into small chunks. Grate the fresh ginger if you’re adding it for a little zing.

Step 2: Blend the Goodness
In your blender, combine:

Chopped beets
Chopped carrots
Chopped apple
Fresh lemon juice
Grated ginger
Cold water
Blend on high until fully smooth and vibrantly colored.

Step 3: Strain the Juice
For a silky finish, pour the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or jug. Press down with a spoon to extract every drop of that precious juice.

Note: You can skip straining if you enjoy a thicker, smoothie-like texture packed with fiber.

Step 4: Sweeten and Serve
Taste your juice! If you’d like it a bit sweeter, stir in honey or agave syrup.
Pour into glasses over ice, garnish with a slice of apple or a mint sprig, and serve immediately.
