Ingredients (serves 4):

2 medium sweet potatoes, diced
1 bell pepper, diced
½ red onion, sliced
2 tbsp olive oil
1 tsp smoked paprika
Salt & pepper
4 eggs
Optional: avocado slices, hot sauce, or fresh herbs
Instructions:

Preheat oven to 400°F. Toss sweet potatoes, pepper, and onion with olive oil, paprika, salt & pepper.
Roast for 20–25 mins until golden and tender.
Crack eggs on top and return to oven for 5–7 mins until eggs are set to your liking.
Serve warm with optional toppings.
