Overnight Chia Pudding with Berries & Almond Butter


This no-cook breakfast is creamy, naturally sweet, and packed with nutrients. Make it the night before, and wake up to a ready-to-go jar of chia pudding layered with berries and almond butter.

Prep & Chill Time:

Prep: 5 mins
Chill: Minimum 4 hrs (or overnight)
Ingredients (serves 2):

¼ cup chia seeds
1 cup almond milk (or milk of choice)
1 tbsp maple syrup
½ tsp vanilla extract
Fresh berries (strawberries, blueberries, etc.)
Almond butter or peanut butter
Optional: granola for topping
Instructions:

In a jar or bowl, mix chia seeds, almond milk, vanilla, and maple syrup. Stir well.
Let sit 10 mins, stir again, then refrigerate at least 4 hours or overnight.
In the morning, layer with fresh berries and almond butter. Top with granola if desired.
