Orange Blossom Honey Madeleines

Step-by-Step Instructions

1. Prep the Batter

In a mixing bowl, beat the eggs and sugar together using a whisk or hand mixer for 2–3 minutes until pale and slightly thickened. Add the honey, orange zest, and vanilla extract. Mix until combined.

2. Add the Dry Ingredients

Sift in the flour, baking powder, and salt. Fold gently using a spatula until just incorporated.

3. Add the Butter

Slowly pour in the melted butter while folding gently to keep the batter airy. Mix until smooth and glossy.

4. Chill the Batter

Cover the bowl and refrigerate the batter for at least 1 hour (or up to overnight). This helps the madeleines form their signature hump.

5. Bake to Perfection

Preheat your oven to 375°F (190°C). Grease a madeleine pan generously with butter or nonstick spray. Spoon about 1 tablespoon of batter into each mold (don’t flatten it — it will spread on its own).

Bake for 10–12 minutes, until the edges are golden and the centers spring back to the touch.

6. Cool and Serve

Let the madeleines cool in the pan for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired and serve warm or at room temperature.
