One-Pan Lemon Herb Salmon with Roasted Veggies

Ingredients (serves 4):

4 salmon fillets
2 cups baby potatoes, halved
1 cup broccoli florets
1 red bell pepper, sliced
3 tablespoons olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 teaspoon dried oregano
Salt & pepper to taste
Fresh parsley for garnish
Instructions:

Preheat oven to 400°F (200°C).
Toss potatoes, broccoli, and bell pepper with 2 tbsp olive oil, salt, pepper, and half the garlic. Roast 15 mins.
Meanwhile, mix lemon juice, remaining olive oil, garlic, oregano, and salt/pepper. Brush onto salmon.
Place salmon on the baking sheet with veggies and roast for 10 more minutes.
Garnish with parsley and serve!
