This vegetarian delight combines tender zucchini, tangy tomatoes, and gooey melted cheese for a satisfying meal that’s as easy as it is delicious. Great for busy nights or a light lunch!

Ingredients

•   2 medium zucchinis, sliced into rounds
•   1 cup canned diced tomatoes (or fresh, chopped)
•   1 garlic clove, minced
•   1 tbsp olive oil
•   ½ cup shredded mozzarella (or dairy-free alternative)
•   1 tsp dried oregano (or fresh if you have it)
•   Salt & pepper, to taste
•   Optional: fresh basil leaves for garnish

Instructions

1.  Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
2.  Add zucchini slices and cook for 4–5 minutes, stirring occasionally, until they start to soften.
3.  Stir in the diced tomatoes and oregano. Season with salt and pepper. Let simmer for 5 minutes until the sauce thickens slightly.
4.  Sprinkle mozzarella evenly over the top. Cover the skillet and cook for 2–3 minutes until the cheese melts.
5.  Garnish with fresh basil if desired. Serve hot—pairs great with crusty bread or on its own!
