No-Bake Cheesecake (Fresh & Creamy)

A quick and easy dessert — no oven needed!
🌿 Ingredients (for an 8-inch pan):
Crust:
- 200g graham crackers or digestive biscuits (crushed)
- 100g melted butter
Filling:
- 400g cream cheese (like Philadelphia)
- 200ml heavy cream
- 100g powdered sugar
- 1 tsp vanilla extract
- Zest of 1 lemon
Topping:

- Strawberry jam or fresh fruit (strawberries, blueberries, etc.)
👩🍳 Instructions:
- Mix the crushed biscuits and melted butter. Press into the bottom of a springform pan. Chill for 15–20 minutes.
- In one bowl, whip the cream until fluffy. In another, beat the cream cheese with sugar, vanilla, and lemon zest.
- Gently fold the whipped cream into the cream cheese mixture.
- Pour over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours, ideally overnight.
- Before serving, top with jam or fresh fruit.
