No-Bake Cheesecake (Fresh & Creamy)

A quick and easy dessert — no oven needed!

🌿 Ingredients (for an 8-inch pan):

Crust:

  • 200g graham crackers or digestive biscuits (crushed)
  • 100g melted butter

Filling:

  • 400g cream cheese (like Philadelphia)
  • 200ml heavy cream
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Topping:

  • Strawberry jam or fresh fruit (strawberries, blueberries, etc.)

👩‍🍳 Instructions:

  1. Mix the crushed biscuits and melted butter. Press into the bottom of a springform pan. Chill for 15–20 minutes.
  2. In one bowl, whip the cream until fluffy. In another, beat the cream cheese with sugar, vanilla, and lemon zest.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Pour over the chilled crust and smooth the top.
  5. Refrigerate for at least 4 hours, ideally overnight.
  6. Before serving, top with jam or fresh fruit.

🍓 Fruity twist: Try it with mango, passion fruit, or lime curd for a tropical version!
