Fluffy Lemon Ricotta Pancakes

Ingredients (serves 4):
1 cup ricotta cheese
¾ cup milk
2 eggs
Zest of 1 lemon
1 tbsp lemon juice
1 tsp vanilla extract
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
Pinch of salt
Butter or oil for cooking
Instructions:
In a bowl, whisk ricotta, milk, eggs, lemon zest, juice, and vanilla.
In another bowl, mix flour, sugar, baking powder, and salt.
Combine wet and dry ingredients just until mixed.
Cook pancakes on a buttered skillet over medium heat, 2–3 mins per side.
Serve warm with berries and maple syrup or honey.
