Ingredients

4 bone-in, skin-on chicken thighs (about 1.5 pounds / 680g)
3 tablespoons (45ml) olive oil
4 cloves garlic, minced
1 tablespoon (15ml) fresh lemon juice
1 tablespoon (6g) lemon zest
1 tablespoon (2g) fresh thyme leaves (or 1 teaspoon dried)
1 tablespoon (2g) fresh rosemary, finely chopped
½ teaspoon ground black pepper
¾ teaspoon salt
½ teaspoon paprika (for a touch of warmth)

Instructions
Step 1: Marinate with Love
In a large bowl, combine olive oil, minced garlic, lemon juice, lemon zest, thyme, rosemary, black pepper, salt, and paprika.
Add the chicken thighs and toss until they’re well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.

Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper for easy cleanup. Place the marinated chicken thighs skin-side up on the baking sheet. Tuck a few lemon slices between the pieces for extra fragrance.
Step 3: Roast to Perfection
Roast in the preheated oven for 30–35 minutes, or until the chicken skin is golden and crispy, and the internal temperature reads 165°F (74°C).
For an extra crispy finish, you can broil the chicken for the last 2-3 minutes — but watch it closely!
Step 4: Garnish and Serve
Let the chicken rest for about 5 minutes. Then, sprinkle fresh herbs on top and serve with lemon slices for a bright, elegant finish.
