Creamy Pesto Gnocchi with Spinach

    Ingredients (serves 4):

    1 (16 oz) package potato gnocchi
    2 cups fresh spinach
    ½ cup pesto
    ½ cup heavy cream
    1 tbsp butter
    Salt & pepper to taste
    Optional: grated parmesan
    Instructions:

    Cook gnocchi according to package instructions; drain.
    In a pan, melt butter, stir in pesto and cream. Simmer 2 mins.
    Add spinach and cooked gnocchi. Stir until spinach wilts and everything is coated.
    Season to taste and top with parmesan if desired.
