Ingredients (serves 4):
4 boneless, skinless chicken breasts
¾ cup heavy cream
2 handfuls of fresh spinach
3 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon butter
½ cup grated parmesan (optional but delicious)
Salt & black pepper, to taste
Red pepper flakes, for a little heat (optional)
Instructions:
Prep the chicken
Slice each chicken breast in half horizontally to make thin cutlets. Season both sides with salt and pepper.
Cook the chicken
Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 4–5 minutes per side, until golden and cooked through. Remove from skillet and set aside.
Make the sauce
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir in parmesan if using. Let it simmer gently for 2 minutes.
Add the spinach
Toss in the spinach and cook until wilted, about 2 minutes.
Bring it all together
